Hey hey! I’m looking forward to this week. Basically because there aren’t major appointments! I love looking at the calendar and seeing nothing on the schedule. Lovely! It’s a chance to catch up with some things.
Hope you had a nice weekend! We were pretty busy. I was sick all day Friday (bummer), but recovered completely by Saturday. Saturday we had church, a birthday brunch, and then a 1 year old birthday part in the afternoon. We were pretty pooped. Sunday was fairly quiet. Hubby was working on a presentation all day, and I caught up on some housework that I would have done on Friday.
This week’s menu cracks me up! It’s basically a repeat of last week 🙂 We had dinner at a friend’s house on Thursday, I was sick on Friday (no one would want to eat what I cooked!), and I planned on cooking dinner Saturday (silly me!), so we had several meals that I had ingredients for already. So why not? It’s also my turn to host my good friends and their sweet babies for our weekly play date/lunch gettogether, and I just have to make that Kale, Black Bean & Avocado Burrito bowl again. It was SO GOOD!!

Mexican Pizza with Salsa Roja & Cilantro Pesto
(From Fields of Greens, pg. 180; this recipe makes a double batch of the sauce,
so making the pizza a second time is pretty easy! Plus, it uses that smoked cheese.)

I need to get better about menu planning, and following through with it!
It is so hard! It’s the one task each week I feel like I have to do, but hate it the most… that’s why I’m trying to make 10 spring/summer menus, then I can just reuse them… that’s the plan, anyway!

You’re welcome to come!! 🙂 There are definitely some nights where the planned meal just doesn’t sing to me, and then I have to get creative. Meal Planning is a chore, but worth it, I think.

I always attempt to plan weekly menus, but can never stick with it. Where do your meal ideas from?
Inspiration for meals is the hardest! I get tired of eating the same things each week.
I get ideas from Pinterest and my favorite recipe books (which right now is Fields of Greens). And then we always have a few regulars that HAVE to be in the menu each week. My husband went through a real taco phase, where we had to eat it at least once a week.
My main tip, though, is that I try to use the same formula each week: 2 Mexican food dinners (our favorite), 1 easy meal, 1 “fancy” meal (usually for Saturday or Sunday), 1 pasta meal, 1 comfort food meal, and then our seasonal Friday night meal (soup in fall/winter, and taco salad in spring/summer)!

I could really use a weekly menu to start planning our meals. I’m so unorganized I think this will be my next big project to work on..making some cute menu printables! Love being organized when I can do it with cute accessories or printables!
