Hope you had a fabulous weekend! I was hacking up a lung (sorry… TMI?) and just trying to feel better. But mommies don’t get sick days. Anyway, that was pretty much our weekend, summed up 🙂
If this is your first time visiting for Menu Monday, then welcome! This is where I share my weekly dinner menu, along with recipes. I tried the mexican pizzas last week! HUGE hit with my kids. Thanks for the new idea!
Katie – You’re so organized! I hope to be like you and plan meals in advance…someday! 🙂
Thank you, Michelle!! It’s not my favorite task I do every week, but it needs to happen 🙂
Thanks for the link to Black Bean & Butternut Squash Enchiladas! They sound incredible.
You’re welcome!! They are exactly that. In fact, even though I’ve already had my lunch, I just spied leftovers in the fridge. Tempting!
Those enchiladas look amazing!
They are so good!! Buy pre-diced butternut squash to make it really easy to put together!
I really, really need to start blogging my weekly menu. I’ve always been a meal planner, but I’m struggling lately to feel inspired and motivated to cook. This would be such a cool series to turn into a link-up . . . I love seeing what other people are cooking and getting ideas. 🙂
Oh a link up is a great idea! I’d definitely join in. When it gets warm, I generally dislike cooking – especially since most of my favorites dinners involve turning the oven on!! Glad you stopped by!
