Menu Monday #26


How’s it going? Hope you had a lovely, Fall weekend! We sure did! I am so excited for nice, beautiful Fall weather down here in Durham.

When the weather turns cooler, it always gets me in the mood for comfort foods. I have one of my favorite baked pasta dishes on the menu for tonight. This recipe is originally from Cook’s Illustrated, and it makes a HUGE pan! When I make it, we have pasta for days. Instead, this time I’ll be splitting it up and taking one half to a friend who has just had a baby.

I’ve also got our favorite enchiladas on the menu, but since I’ve got a slew of taco shells that need used up, we’ll have them taco style instead ๐Ÿ™‚

I’ve got one “new to me” recipe on the menu this week – a vegetarian shepherd’s pie! I love shepherd’s pie (when I have a hankering for real meat, which I do occasionally indulge in) but this version looks pretty darn tasty.

Finally, I was really craving a hearty soup for our Friday Soup night! I went digging through my saved recipes and remembered this Wild Rice and Mushroom soup from Cook’s Illustrated. It’s many steps, but oh so delicious! (In case you’re wondering, Cook’s Illustrated is sneaky and stingy with sharing their recipes on the website. THANKFULLY some people cook them, and post the recipe on other sites!)

That was a lot more food chatter than I was expecting! So let’s get cracking!

And, as always, I have links to as many recipes as I can reference. Some, though, are just “open a can” or “microwave that”. You know what I’m saying??

Baked Penne Pasta

with a Walnut Brown Butter Sauce & Balsamic Drizzle

Eggplant Parm Casserole
(Helps use up ingredients from our penne pasta!)

Friday (Soup Night):
Wild Rice & Mushroom Soup

Lazy Vegetarian Sheperd’s Pie

Grilled Cheese Roll ups with Tomato Soup
(I’ve been dying to try those roll ups!)

    Katie, You are so organized. I want to be like you! When it comes to cooking for my family, I tend to be a fly by the seat of my pants type of girl. Your baked penne pasta looks delicious! I know my husband and I would scarf it up – but our little one wouldn’t be able to eat it due to a dairy intolerance. So I may be cooking your dish for us and something else for her. Many thanks for sharing your meal plans with those of us who “fly” through cooking for the week!

      Oh you’re so sweet, Michelle! Some weeks there is a menu here, but i don’t cook it ๐Ÿ™‚ try the pasta! I just made it tonight and aplit the batch to take one half to another family. Plenty of food left here at our house for hubby and I to eat. Not sure how to go about this particular recipe to make it dairy free. But it is delicious!

      Glad you stopped by!! That eggplant parm casserole is really good! And easy! I roast the eggplant ahead of time usually. I’ve even built it in the morning, popped it in the fridge and just baked it in the evening. It’s pretty versatile!
