Simple Baked Oatmeal - Easy to make for a few or a crowd!

I love the ease and simplicity of oatmeal. It’s something the whole family can eat, and it’s a breeze to put together!

But just standard oatmeal can get dull. So enter the baked oatmeal!

Baked oatmeal is so versatile. You can pair any spice or fruit with it. You can use milk, water, applesauce, or a combo of everything!

There are a million recipes on Pinterest to use, but I find this recipe can easily to double or triple when I have company visiting. And with Christmas just around the corner, this will definitely be on the menu for when we have a house full to the brim!

I don’t remember where the original recipe came from, but I’ve adapted it slightly over the years!

Here’s what you’ll need:

1 cup oatmeal (old fashioned rolled oats)

2 cups liquid (can be any combo you like! Although I do find if using applesauce, stick to no more than 1 cup total)

1/4 cup brown sugar (light or dark… doesn’t matter)

1/2 cup fruit, or a generous handful  (I like blueberries. When they heat up they burst! But even frozen fruit works!)

1 tsp cinnamon or other spice mix

Pinch salt

Dump all your ingredients into a bowl and stir until combined.  Pour the ingredients into an 8×8 baking dish or other casserole dish that has been sprayed with non-stick spray or a non-stick method of your choice. Pop it in a preheated 350 F oven and bake for 40 minutes or until bubbly and the top has browned.

Dish up and serve!

This recipe serves 2 adults and one toddler. BUT this recipe is easily adaptable to feed whatever sized crowd you have. The key to remember is that it’s 2:1 ratio. 2 liquid to 1 oatmeal. From there you can increase to your heart’s content!

    What a great recipe. I really like oatmeal, but had never eaten it this way. I think it’s just not usual in Germany. Will definitly try this recipe.
    Oh, and congrats to your own domain name and the new beautiful design.

      I’m so glad! It’s just so gloriously easy. It always impresses. I just don’t tell people it takes me less time to mix together than it takes the oven to heat up!

    What a yummy recipe! I can’t wait to try it. I’ve also been wanting to try one of those oatmeal recipes where you put the oatmeal in a mason jar with fruit and other stuff — kind of like a parfait — and leave it in the fridge overnight. Have you ever tried that method?
