Hello, and Happy Monday! Hope you all had a wonderful weekend. We spent our Saturday driving back from Michigan back home to North Carolina, and as a result had a lovely low key Sunday. But we’re back to the regular grind now.
I’ve missed a few Menu Mondays this past month. Some weeks purely out of laziness. But I was also doing hodge podge meals, trying to whittle down our freezer and pantry supplies! And it was such a success!
Since we’ve been traveling and eating out a ton on vacation, I felt like this week was a week to eat healthy (in theory), light, and simple.
If you haven’t seen a Menu Monday post before, I share what we’ll be eating this week. (You can see how I generally menu plan here) I also try to include links to recipes where I can. Although some weeks are just DIY (open a can of this, saute that).
