Menu Monday #56 | Simple Meals for a Busy Week

Yahoo Monday! Another week!

Did anyone get a chance to see the lunar eclipse last night? We didn’t… it was hiding behind clouds and then it was too low and behind the trees for us to see. My husband even went out driving around trying to see if there was a better spot to see it, but no luck. This was disappointing, because Elizabeth was really excited to see a “Super Moon”. I even promised her as I was putting her to bed that I would wake her up to see it if it came out from behind the clouds. I’m sure she clutched her little blankie, in the dark, all excited that any minute now mommy will walk in and tell her it’s time for the “Super Moon”. Sigh….

What’s on your menu this week?? I’m trying to keep it fairly easy. We’ve got a busy week, so I was looking for either quick meals to get on the table or meals I could start early and pop in the fridge. We have a church potluck on Saturday… and I need to figure out what to make for that……. ideas? There is usually a million casseroles, but lacking in vegetables. So maybe I’ll make a batch of roasted veggies?

I’m most excited for our first Chili and Cornbread meal of the season! It’s basically the only soup my husband is happily willing to eat, so we eat a lot of it throughout the Fall/Winter, but I’ve been craving it recently!

Monday:
Taco Salad

Tuesday:
Stovetop Mac & Cheese + sun dried tomatoes + carmelized onion
(we never got a chance to eat this. But recipe coming!)

Wednesday:
Indian Curry
(pre-made, from Costco)

Thursday:
Paninis with tomato, basil and mozzerella

Friday:
Quinoa Chili & Cornbread

Saturday:
Church Potluck… need to figure out what to bring!

Sunday:
Tacos

      I know… we were really excited. But oh well! And if nothing else this week’s menu is yummy but easy! We need that right now!!

    Yay for chili! I made a HUGE pot last week and it was gone after two meals. We really missed it over the spring and summer. 🙂

    I never know what to take to church dinners either! Maybe a big salad with berries and toasted nuts?

      That’s a good idea. Our big potlucks are usually lacking in vegetables… there are tons of entrees and desserts, but not many veggies and sides. Sometimes I come with a big bowl of diced fruit, because I figure it’s Elizabeth-friendly. I’m awaiting some inspiration 😉

      And I’m REALLY excited for chili!! I’ve held off as long as I could to make it… I know it will be a staple all Fall and Winter so I didn’t want to make it too early, but yum!

    I love taco soup!! We couldn’t see the super moon either due to clouds. Oh well there seems to be a million pictures online today so I think we’ll be fine. It seems like anything pumpkin, pasta salad or finger foods are always a hit a big gatherings.

      I just love soup! I am glad we’re back into soup weather, because it’s just so satisfying to eat. And it’s usually easy to throw together for an evening meal!

    I was unsuccessful in seeing the Super Moon too! Womp! Also, I finally got a chance to watch the Google Hangout today, and it was great! You guys are so warm and funny, and I feel like I know you all so much better now! 🙂

      HA! So glad you liked the Hangout! They are tons of fun, but we always wish there was a better way to interact with everyone. And it was such a bummer with the moon. I really wish the clouds weren’t an issue, but such is life, right?
