Happy Monday! Did you have a good weekend? We tackled some Christmas decorating (almost done!), had a busy Saturday of church fun AND a birthday party, and just tried to relax. Not too shabby of a weekend!
Can I have a moment to testify? (a little church jargon for you today) Last week I didn’t menu plan… we got back late Sunday night from Thanksgiving, and menu planning just didn’t seem like a fun idea. I just decided to go to Trader Joe’s and wing it. I didn’t go overboard there, but certainly didn’t buy for specific meals. I figured I had plenty of other things at home that I could easily cobble together a week’s worth of food.
Well, for me, not having a specific menu that I bought and planned for really throws me off. And last week was no exception. We spontaneously ate out 3 times last week, just because I was lacking inspiration for what to make for dinner. So lesson learned, menu planning really DOES work, even though it’s a pain to do. But 30 minutes of pain means a whole week without dinner frustrations.
For this week’s menu, I cruised through my dinner Pinterest board, and found a recipe I had pinned but never made. It’s a curry recipe from Jaime Oliver. It looks yummy! I also wanted to have this yummy corn chowder soup again! My husband isn’t a corn chowder/potato soup guy (SHOCK!) so when he eats a corn chowder and declares it “delicious” you know it’s a winner. So I’m making it again!

You’re right – if you don’t put in the work ahead of time, you’ll end up eating out more than you’d like. I try to ask my hubby’s input for dinner ideas for the week so it’s kind of a shared task to come up with ideas 🙂
