Happy Monday! I hope you all had a wonderful Easter weekend. I can’t believe how fast it went! We were up in Virginia Beach, visiting my in-laws. So much fun! Elizabeth definitely enjoyed her first Easter.
So here’s what we are eating for dinner this week! I’ve been exploring Pinterest for some food ideas (since I mentioned last week I need more variety than just my Fields of Greens cookbook). Now that I look at the menu written out, I realized this is the first time we are NOT having tacos. SHOCKED!

I’ve been thinking about blogging my weekly menu! I have this urge to try lots of new recipes lately, which is CRAZY with a 6-week-old. I should be sticking to tacos and other easy staples! Pinterest is dangerous. Your meal plan sounds so much healthier than mine! 😉
Well, I don’t know about healthy 🙂 It’s deceptive! But yes, menu planning, or just cooking in general, with little ones is a challenge! But mercy, Pinterest makes me think I should be preparing magazine-worthy meals every night! Ohi. You should definitely start blogging your menu! I’d stalk it, and steal some recipes! 🙂
