Happy Monday! Hope you had a fantastic weekend! We spent our time resting up after having the sickies move through. Fun.

That being said, this week’s menu is all about comfort foods that are easy to cook up! I am a sucker for homemade mac & cheese, and this recipe looks like a winner!

Monday:
Tacos

Tuesday:
Alton Brown’s Mac & Cheese

Wednesday:
Mexican Pizza
(From Fields of Greens)

Thursday:
Veggie Chicken with Mushroom Cream Sauce
(My own hodgepodge recipe)

Friday:
Chili with Cornbread
(This isn’t my usual recipe, but this one looks yummy!)

Saturday:
Enchilada Spaghetti

Sunday:
Mini Pizzas

And now, bonus recipe! We gave this a whirl a few weeks ago, and just had to share! It’s not necessarily a new invention, but we did build-your-own pizzas using English muffins as pizza crust!

I had bought a two pack of English muffins since my husband likes to use them as a breakfast sandwich base. We were craving pizza, and so I whipped this up.

Ingredients:
English Muffins
Sauce options (we used two kinds – pesto and a tomato basil pasta sauce)
Variety of topping choices

Preheat oven to 400 degrees. Open up the English muffins and lay the halves out on a parchment covered baking sheet. Bake English muffins (no toppings yet!) for about 5 minutes, until lightly toasted. Add sauce, then toppings. Bake for another 10 minutes or until cheese is melted.

We put together three types, but decided only two were yummy enough to share.

Pesto Pizza – pre-made pesto for sauce, topped with
Traditional – pre-made tomato basil pasta sauce, topped with mozzarella, olives and onion

The third was a Mexican style pizza… and it needed some tweaking…

But the possibilities are endless! You could use roasted red peppers, hot peppers, do a Mexican pizza version, or add sausage! This would also be a great party idea. Have toppings already chopped and guests and DIY their own pizzas.

    What a great idea. We love doing pizzas and I’ve recently gotten the kids involved on putting the toppings on. I like this idea of the mini pizzas so that everybody can do one or two as the like. Mexican pizza sounds yummy.

      Yes! My toddler enjoyed the pizzas, and I know she’ll love making them herself when she’s a little older. Thanks for the idea!

    The Veggie Chicken with Mushroom Cream Sauce recipe sounds so good! I love how creative you got with your pizza toppings. I seem to always just stick with cheese but these were great ideas! Yum!

    First of all, that’s such a cute picture of you! I made individual pizzas with tortillas a few weeks ago. The English Muffins are a great idea too, and how fun to have more than one type of pizza in one meal!

      Thanks!!! And variety is the spice of life! (And dinner!) love the idea of tortillas! We always have a lot hanging around.

      Ooooo that sounds yummy!! On our black bean and corn version I wasn’t exactly sure what to use as sauce, and just kept using the traditional tomato basil sauce. Not great… We had tons of salsa in the fridge. I’ll have to try that next time!

    I’m not sure which thing I like better – your pizzas or your pearls!?!? You look adorable with you gingham and pearls. The pizzas look delicious and I can imagine that little ones would really have fun helping make this dinner.
