Menu Monday #42 + Simple Easter Dinner Menu

Happy Monday! Did you have a nice weekend? Catch some basketball? We’ve got some basketball fever in our house! Go Duke!

So this week’s menu has quite a few spring/summer dishes. I’ve been craving things that are lighter, salads over baked dishes, etc. Maybe its because we were on vacation and we ate out a lot. Or maybe I’m just hoping for warmer weather… either way, Spring is starting to pop up on our menu!

We are still up in the air about what we’re doing for Easter! I’ve planned out a simple Easter menu if we stay here and its just us. What do you usually have on Easter?

Here’s what we’re eating this week!

Monday:
Tacos

Tuesday:
Black Bean and Butternut Squash Enchiladas

Wednesday:
Taglierini with Roasted Tomatoes, Zucchini & Basil
(From Fields of Greens cookbook, but recipe here!)

Thursday:
Summer Vegetables with Red Curry
(From Fields of Greens cookbook)

Friday:
Southwest Chopped Salad with Creamy Cilantro Lime Dressing

Saturday:
Leftovers!

Sunday (Easter):
Casserole (still deciding which one!)
Mashed Potatoes and gravy
Roasted Asparagus
Simple Salad
Cake with Lemon Curd and Berries

    Hi, Katie – Just curious: Will you follow Wednesday’s recipe exactly? It looks good but roasting tomatoes for two hours seems like a lot of work! We’re not sure about our Easyer meal plan either. I’m thinking that the Trader Joe’s Santa Maria Tri Tip will be a go!

      I don’t know. You can roasted tomatoes in advance and then pop them in the fridge to wait. If I was smart I should have done this Sunday. But the recipe also mentioned (at least in the book version) using sun dried tomatoes in place of roasting if needed. Then use broth to sub for the tomato juice you would have taken from the tomatoes prior to roasting. Thankfully roasting is one of those “prep for 5 minutes then don’t touch for 2 hours” activities which I love 🙂

    We’ve got the basketball fever over here too…Go UK! 🙂 I made big salads to go with our suppers last week – I’m definitely craving lighter fare as well. Haven’t nailed down the Easter menu yet. Last year we grabbed KFC and I made the sides…I’m thinking that might be the way to go this year too. 🙂

    We’re a Utah Utes family and so we’re not celebrating. 🙁 Those butternut squash enchiladas look amazing. I love the idea of a simple casserole for Easter and I always have to have roasted asparagus.

      Oh poo. 🙁 We get so excited for March Madness time, don’t we? My hometown Ohio State Buckeyes dropped off pretty fast.. but it is nice to be in a basketball town here in Durham. You can’t help but be a Blue Devils fan!

      I love roasted asparagus! And simple casseroles are yummy for dinners, especially if you can make it ahead!
