Menu Monday #48

Happy Monday! Hope you had a wonderful weekend!

We had two absolutely DELICIOUS meals last week! The first was a quick, throw-together dinner. I made burgers with Morningstar Farms Spicy Black Bean burgers and topped the patties with guacamole, pepper jack cheese and carmelized onions. Mmmmmm! They were so good, we had them for dinner two nights in a row.

The second yummy dinner was Thai-style lettuce wraps. So good and simple! I made them the first night with the recommended chopped pecans, and then made them for friends another night using diced tofu. Both really yummy options.

This week’s menu had to include dinners that come together quickly. My husband has one more week left working at the hospital for crazy hours, and you just never know when he’s coming home.

I normally build the menu first, and then write the blog post, and now that I’m looking at the menu, it’s heavy on the black beans! We’ll be a very musical family 🙂

Paninis with Pesto, Mozzarella, Tomato & Spinach

Friday:
Taco Salad

Saturday:
Leftovers

Sunday:
Avocado Black Bean Enchiladas

    Musical family! LOL! Yay for successful recipes last week – that’s always a good feeling. I know all about the dinner game where you try to keep the food warm without overcooking it or find things that reheat nicely when hubby’s working crazy hours. I’m glad for you that those days are ending! 🙂 Taco salads sound delish – I need to make that soon.

      I’m so glad the crazy hours will settle down again soon! And I’m most excited for taco salad this week. So yummy!

      I know – the burgers are so good as other things too!! But this burger sandwich was just so delicious!! It’s going back on the menu next week.

      It was such a good recipe! You could easily sub in whatever protein you needed, but I was surprised that the ground pecans tasted so yummy!

    Well if anything I am THRILLED to know that someone else cooks mexican inspired meals more than twice in one week other than me! All of these look YUM!
