Happy Monday! Who survived that HUGE winter storm?? Here in NC we got a few inches of snow, followed by a nice layer of ice. It was nasty to get out and about. But great news! I see our grass now. All is well.

This food blog is one of my go-tos for delicious vegetarian recipes. And this did NOT disappoint! The burrito filling is easy to switch up with other ingredients you may have on hand. But that sauce is a MUST MAKE!
The World’s Best Seven Layer Bean Dip from Pretty Providence
This is perfect for your upcoming Super Bowl Party! We’ve eaten this twice in 2 weeks and it’s delicious. Easy to throw together for a fun dinner or perfect to haul to a potluck with friends. You can add to the veggie toppings for the top to suit your tastes. I made this over the weekend and added sliced spinach and cilantro.
Sweet Corn Chowder from Maebells
I’ve made this several times so far, but it was definitely a must make this weekend with the huge snowstorm. My husband isn’t a soup guy but this one is something he loves to eat! If that’s not an endorsement, I don’t know what is!

I haven’t made that Cookie and Kate recipe but I regularly make her black bean and sweet potato tacos. I don’t make the avocado dressing to go on top I just add sliced avocados. 😉
Basically the same recipe! That avocado dressing was killer. But I’ve also made a Salsa Verde/Greek yogurt mix in a pinch.
Mmmm. These sound so good! That sweet potato burrito?! I need that.

I’m a sucker for any Mexican dip so your 7 layer dip sounds amazing! I’ll have to keep that in mind for my Superbowl menu. Love your place settings and the assortment of food options. I love that your menu has a balance of delicious recipes and fun things like the food truck rodeo – yum!!

Yep, I agree with Whitney Jordan…that dip sounds amazing! I have a recipe for a mexican casserole with very similar ingredients that I always end up eating out of the dish with a handful of chips. 🙂

We had snow flurries here in Florida while you all were getting the snow over the weekend, so we had some warm, winter meals too. 🙂 The sweet corn chowder sounds like a great recipe to try this winter!
