Welcome to another Menu Monday! We’ve had some absolutely delightful meals the last few weeks. It’s been fun diving back into regular meal planning after my self-imposed maternity leave.
You’ll notice that this week’s breakfasts and lunches include similar meals compared to a few weeks ago. It’s just so much easier to eat the same few meals for breakfasts and lunches in order to add them to my Fitness/Meal tracker. Lazy healthy eating here!
I’m slowly starting to incorporate those warm comfort foods of Fall into our menu this week. I LOVE Fall and Winter foods, and even though it’s supposed to stay in the high 80s this week, I’m determined to enjoy my comfort foods. HA! Are you a Fall foods fan?
Anyway, here’s this week’s menu:
Breakfasts:
Plain Greek Yogurt topped with Honey, Fruit + Granola
Egg Whites with Spinach + Feta
Breakfast Tacos with Black Beans, Feta + Pico de Gallo
Lunches:
Avocado Toast with Spinach + Tomato
Baked Sweet Potato with various toppings
Salad (whatever I’m feeling!)
Dinners:
Pasta with Kale, Chikpeas + Sundried Tomatoes
Thai Sweet Potato Curry
Corn, Cheddar + Scallion Strata
Mushroom + Chikpea Marsala
Taco Salad

Bring on the fall foods. I am SO ready for them. If only the temperatures agreed though :P.
Hahaha the hot weather isn’t helpful but he comfort foods are oh so delicious!
Oops…I forgot to stop eating fall foods for the summer. 🙂 I love them so much! The only thing I quit making for the hot months was soup, and I”m so excited for chili, stews and soups! Your menu looks so yummy, I always love avocado toast. We are having taco salads this week too!
Hahaha I definitely still eat fall foods all year long!
So ready for everything fall! It’s so cozy when the stove warms up the house while baking or making dinner. Looking forward to more pasta dishes, meatloaf and white chicken chili…mmmm! I noticed your inclusion of kale in cooking, and I’m hoping to do more with it as well. Tried kale for the first time this summer, and it’s delish!
I like kale in things. Sometimes the kale salads can be bitter. But bring on the Fall cozy!
