Hope you had a fabulous Independence Day weekend!

We had a pretty quiet weekend ourselves, which was wonderful!  On the 4th we had our burgers, potato salad AND an apple pie (which I polished off for breakfast this morning).  And then we all went to bed early!

On Saturday, we actually all got to go to church together!  Then we had a genius (sarcasm) idea to go on a hike at Occoneechee mountain.  When we started out, husband said “I don’t remember why you didn’t like this hike, Katie?”.  Well, it took us about 15 minutes of walking in 85 degree weather, carrying a small child, to remember why.  You’re climbing….. a mountain.  We were shattered.  So we consoled ourselves by picking up burritos on the way home.

Anyway, enough about that.  On to the menu!  This week we’re headed up to visit my in-laws in Virginia Beach for a long weekend, so we’re focusing this week on clearing out our fridge!  In fact, my shopping list says: Black Beans, Jar Roasted Red Peppers, Milk.  Ha!

Hey Hey! It’s Friday!

TGIF!  And Happy Independence Day!  I hope you’re wearing your best Red White and Blue, and have fun celebratory plans today!

Here’s what I was up to this week:

1. My weekend seemed a bit of a blur. I was sick.  It thankfully wasn’t an “I can’t move off the sofa” kind of sick.  Just a stuffy nose and cough.  Could have been worse.

2. I traveled to the mall on Wednesday (dangerous) to pick up some tiny toiletries at Sephora for my sister as a fun honeymoon gift.  I spent WAY too much, but had a great time!  I also picked up this new Ellen Tracy dress at Macy’s to wear for all the wedding festivities.  So pretty!  Next week is shoe shopping… I’m in desperate need of shoes.

3. I bought some beautiful snap dragons at Trader Joe’s this week, and popped them into my tarnished silver pitcher.  They look really pretty together.  I actually prefer my silver tarnished, if it is a nice tarnish.

4. Elizabeth has been hilarious – every time I get her up from a nap, she’s usually sitting up, peeking at me over the crib bumper.  Makes me laugh every time!

5. Speaking of Elizabeth, we spent some family time outside on Sunday, watching Daddy wash the cars.  I got 6 mosquito bites, but it was fun to all be together, having fun.

30 Outfits 30 Days Challenge | Day 13 – 18 Recap

It’s hard to believe another 6 days are done for the 30 Outfits in 30 Days Challenge! Just two more sets left.  If you’re not sure what’s up, you can read more here.  But, long story short: I chose 30 items from my closet, and challenged myself to make 30 unique outfits for the next 30 days!

Here are my thoughts from this week’s outfits.

Most Worn Item | My pink shorts.  Didn’t realize that they were in 3 outfits until I was putting this post together.  Wild!

Favorite Outfit | Day 2 is my favorite!  And I believe that my previous favorite outfits involved my navy blazer.  I love that blazer.  I’d wear it every day if I could!

Least Favorite Outfit | I liked EVERY outfit actually.  So no least favs.

This Week’s Surprise |  I can’t believe I am loving my shorts!  I am normally not a shorts person… I prefer dresses and skirts, but I like how the pink shirts can be dressed up or down.

Hardest Thing About This Week | Um… I’m running out of ideas 🙂  What made it easier this week is about halfway through the week, I started repeating an item for the next day’s outfit.  That helped challenge me!

Vegetarian California BLTs



Today I’m sharing with you one of my favorite summer sandwiches!

I’m sure you have seen a similar sandwich elsewhere, and I know this probably isn’t an original creation, but oh well!

We call this a “California” BLT because my husband and I “invented” this sandwich while we lived in California.  See what we did there?  Interesting fact.

Here are the basic ingredients.  You can of course use whatever bacon you prefer, whether it’s full strength, turkey, or veggie.  These veggie Morningstar Farms ones are classic and yummy!

First up, make some guacamole.  My quick way is to mash avocado with a fresh salsa.  You get the onion, cilantro, garlic and acidity all in one with the salsa.  If you need a quick guac, that’s my top tip! 20140609-200210-72130948.jpg

Next, build the sandwich!  Toast the bread.  Add a layer of guacamole.  Then add the sprouts, bacon, and cucumber.  Top with your other slice of bread.

We had some roasted potatoes.  Quite a satisfying meal!20140609-200254-72174553.jpg 20140609-200255-72175403.jpgMommy Tip: For those that do Baby Led Weaning, you can easily break this sandwich up into baby friendly parts.  My daughter is obsessed with avocado, and would probably eat the guacamole or certainly just the avocado.  The bread can be cut up into strips.  Even the cucumber for the littles with a few teeth would be tasty!

Anyway, here’s a “proper” recipe:

California BLT Sandwich

Ingredients:
Bread
Avocado (2)
Fresh Salsa (approx 4 TB)
Bacon – your choice – 3 strips per sandwich
Sprouts
Cucumber
Any other sandwich toppings you prefer!

1. Toast sandwich bread

2. Cook the bacon according to package instructions.

3. Make your guacamole – for my quick version, halve the avocado, remove the pit, and scoop the avocado flesh into a bowl.  Add to the avocado 2-3 TB of salsa.  Mash.  If the avocado needs a bit more salsa to help mash (if they are barely ripe and little firm), add.

4. Build your sandwich!  In our house, the order is: Bread, Avocado, Sprouts, Bacon, Cucumber, Bread.
