Menu Monday

Welcome to another Menu Monday! We’ve had some absolutely delightful meals the last few weeks. It’s been fun diving back into regular meal planning after my self-imposed maternity leave.

You’ll notice that this week’s breakfasts and lunches include similar meals compared to a few weeks ago. It’s just so much easier to eat the same few meals for breakfasts and lunches in order to add them to my Fitness/Meal tracker. Lazy healthy eating here!

I’m slowly starting to incorporate those warm comfort foods of Fall into our menu this week. I LOVE Fall and Winter foods, and even though it’s supposed to stay in the high 80s this week, I’m determined to enjoy my comfort foods. HA! Are you a Fall foods fan?

Anyway, here’s this week’s menu:

Breakfasts:
Plain Greek Yogurt topped with Honey, Fruit + Granola
Egg Whites with Spinach + Feta
Breakfast Tacos with Black Beans, Feta + Pico de Gallo

Lunches:
Avocado Toast with Spinach + Tomato
Baked Sweet Potato with various toppings
Salad (whatever I’m feeling!)

Dinners:
Pasta with Kale, Chikpeas + Sundried Tomatoes
Thai Sweet Potato Curry
Corn, Cheddar + Scallion Strata
Mushroom + Chikpea Marsala
Taco Salad

Hello September!! I’m so happy to see you!

1. Can we get a case of the giggles out of the way? If you’re a fan of Waiting for Guffman or Best in Show, then this next Netflix addition is for you. The trailer. I can’t even watch it now without immediately laughing.

2. This week was a week of ups and downs as far as the kids go. We had fun times! But then we’d have these horrible moments of terrible 2/threenager (I swear Elizabeth is just moving from horrible to the next). But all was made up when I saw this. So adorable!

3. One of the fun things was heading to a new-to-us park, just around the corner. A local church set it up and it was absolutely precious! Completly shaded (YES!) and all to ourselves. The best! Besides the usual slide and swings, they had the cutest assortment of natural play areas. A play kitchen from branches, stumps for tables and chairs, and even a log for a balance beam! Not to mention my little worker bee Elizabeth spent 30 minutes picking up small sticks and putting them in a wagon. If only she was as productive at home…

4. Can we continue the kid theme this week? How many moms have seen the new kids clothes, Cat & Jack, at Target? Seriously the cutest things! I had about 6 graphic tees in my hands this week and had to resist. What I love (at least on the girls’ side) is it’s not all princesses and tutus. They had dinosaur t shirts! Hooray! My little science/dirt girl would love that.

5. Yesterday marked 12 years since my husband and I started dating. We were entering our Junior year in college. We had been friends for 2 solid years and spent the entire summer emailing each other back and forth. So when we got back to school that Junior year, 2004, we knew it was meant to be. Our first date? I dragged him to go see Princess Diaries II… we were the only ones in the theater, and I’m confident he checked his watch AT LEAST 10 times. HA! Before that movie we had seen one other movie together, in the theater… we saw The Passion of the Christ. That’s right folks. We were just friends, our sophomore year, and we decided “Hey! Want to see a movie? What about Passion of the Christ?”. We sat next to each other, sobbing. I was so emotionally drained by the end that I just wanted to go back to my dorm. Thankfully, we pushed past that. Now, 12 years later, my best friend and I are looking around, wondering where all the time has gone. Wild! There! Your random story for the week 🙂

What’s in my Skip Hop Forma Backpack

I have been a mom of 2 for over 3 months now. Shocker! And over the last few months I’ve been regularly using my new Skip Hop Forma Backpack as my daily diaper bag.

There are quite a few of you out there that have been asking to see how I’ve packed it, used it, etc, and today’s the day!

If you missed my original first impressions video on this bag, let me tell you why I bought this bag. First, I wanted a backpack style for those days when hands free would be key – trips to the museum, zoo, playground, you name it! I also thought it was much lighter than other backpack styles. Third, the price is great, especially for a bag I wasn’t planning on using daily.

But after a while, I found myself using it day after day after day, even for just running errands. It’s roomy, convenient, and holds all I need.

Menu Monday | New Recipes To Try #7


The best Pinterest recipes that you have to try!
It’s the last Monday of the month! That means I’m teaming up with my friends Come Home for ComfortPolka-Dotty Place and Wife Mommy Me to share our favorite recipes from this past month that you HAVE to try!

This month I was getting back in the groove of cooking regularly, with the added bonus of cooking things that are healthy due to my new workout regime. So I scanned Pinterest and favorite cookbooks to find a few new favorites. And I posted those favs on IG!

Avocado Pesto

This avocado pesto from The Forest Feast was SO delicious! The gnocchi wasn’t really a favorite, but over pasta it would be perfect! I bought some avocado oil on a whim while at Trader Joe’s and used it in this pesto and it was delicious!

Sweet Potato and Black Bean Tacos

This was just something I threw together one night, but it was SO good! I found a similar recipe you can follow, but here’s what I did for these delicious tacos!

1 sweet potato, diced
1 can black beans, rinsed
1 green onion, green and white parts, sliced
1 roma tomato, diced
Feta cheese
Cumin +  Garlic Powder
Lettuce (I used a kale/broccoli slaw mix)

Cook the diced sweet potato in the microwave in a bowl for about 7-10 minutes until softened. (This will help speed up the skillet time). Once cooked, add the black beans to the bowl and add a drizzle or two of olive oil. Then sprinkle with cumin, garlic powder and salt to taste. Stir until the black beans and sweet potatoes are coated. Cook in a skillet on medium heat until the sweet potatoes are browned. Turn off heat and serve on top of corn tortillas, topped with your choice of toppings. I loved fresh tomato, green onion, feta and a crunchy slaw.

Healthy Greek Yogurt and Honey Blueberry Muffins

Elizabeth and I whipped these up together and I thought they were delicious! You can tell by the IG picture caption that Elizabeth didn’t think so… but can you trust a toddler? These also froze well.

There were a few more recipes that were DELICIOUS but no pictures snapped. We ate them that quick. This make ahead black bean and spinach enchilada casserole was really yummy! And these lentil lettuce cups from The Forest Feast were SO good! I used sweet potato instead of butternut squash since I already had potatoes on hand.

I can’t believe it’s Friday already! Anyone else have a busy week?

1. This entire week I’ve been fighting a case of the sleepy. Have you ever had a week like that? Basically there isn’t enough coffee or tea in the world to wake me up. I’ve been trying to go to bed early and I even skipped a few early morning workout classes this week to snag an extra hour of sleep, but doesn’t seem to help. I’m hoping this weekend I can really get rid of it.

This week was exhausting!

2. William turned 3 months this week! I swear, didn’t I just birth him? Yes? But he’s adorable right now. He actually properly laughed this week and I’m noticing some of the same little things Elizabeth did at this age, like chewing on his hands, starting to grab at things. He’s also settled right in to a great schedule and I think I’ve figured out his little quirks and preferences (at least his preferences for now).

3. It was finally a great cooking week around here. It all started with a good old fashioned Menu Monday post with our weekly menu. This coming Monday is another round up of all the best Pinterest recipes you need to try, so stay tuned, but our favorite winner? These black bean and sweet potato tacos!!

4. This week we FINALLY had lower humidity and “cooler” weather. It was still in the upper 80s, but a little breeze and lower humidity makes all the difference. So we spent several days playing outside. You saw on IG all our water bead fun (SO addicting!). And earlier in the week we sat in the backyard watching clouds and playing with bubbles.

5. We only have 1 week left of “summer vacation”. Elizabeth starts school again in one week (yay!), our Bible study starts up again in a week, and our usual routine is coming back. I’m really excited for that! It was nice having a laid back summer schedule to help ease us all into having 2 kids, but bring on the routine! Are you still in Summer Mode? Or have you gotten back to the usual routine?
