Happy Monday! I hope you all had a fantastic weekend! We were SO BUSY! I actually had a baby heart attack Friday because the day just flew by and I realized there was so much yet to accomplish.
Despite that fact, however, we decided to spontaneously drive up to Richmond, VA (about 2 hours away) to spend the day with my sister-in-law, her husband and our little niece. Such a fun, relaxing day! But that made Sunday all the more crazy since we had a birthday party in the morning (and I had to quickly rustle up something to make!) and then we hosted a potluck dinner that evening with 6 other families. Such fun! But going out of town on Saturday increased the anxiety level.
Anywho, enough chatter. I’m craving some old favorites this week, so you’ll see quite a few ol’ stand bys pop up.
I also can’t wait to get back to Friday night soup nights. It’s just not cool enough here in NC to rationalize that.
So here’s what we are eating for dinner this week! For more information on how I menu plan, see my previous blog post!

These paninis sound so good! I keep looking for uses for the abundance of tomato and pesto coming out of my garden… if only I had some contraption to make paninis with 🙂
Glad your garden is still shooting stuff out!! As for making the paninis, maybe just baking them in the oven? Or smashing them when in a skillet on the stove? I don’t know what could work…
I love using apricot jam and BBQ sauce together! I’ve never put it on meatballs, but I just might have to try that!
Do it! So good!
Yessssss! I love when people share their weekly menus!!! Thanks for the ideas! I’m a fellow NC blogger and totes agree–it’s way too stinkin’ hot still (although this crummy rain has helped some haha)!
Hope you get some good dinner ideas! I hate planning dinner… but blogging it ensures it gets done 🙂 These last few weather days have been so lovely, haven’t they? A tiny taste of Fall!
