Happy Monday!!! Did everyone have a lovely weekend? Nice weather? We had such nice weather compared to the previous week. Sunny and warm-ish.

Thank you all for the wonderful, tasty quick meals last week! Project “Clear Out the Freezer” was a semi-success. We made a small dent in it. But then yesterday, while at Wal-Mart returning something, I saw they had our favorite veggie chicken patties in stock. Target has been out for at least a month. Understandably, I stocked up on 8(!!!) boxes. So now our freezer is stuffed again. Oops!

We’re back to a traditional menu this week. I chose some comfort foods, as my husband has been working REALLY hard these last few weeks and he’s just worn out.

Trader Joe’s Vegetarian Tamales with Black Beans and Mexican Rice
(Tamales are from my pre-Christmas load up! They were so good!)

Frittata with Carmelized Onions, Goat Cheese & Sage

Friday
Mexican Lentil Soup with Roasted Garlic & Chilies

    We had cold + freezing rain = lots of car accidents. Sunny and warm-ish sounds like heaven!

    Haha, don’t you hate it when your freezer is nicely cleaned out and then you feel the need to stock up on something? Happens to me frequently when I see meat on sale, but that’s how we save on the grocery bill! 🙂

      Those chicken ones are tasty – if you can find them! But the black bean burgers are perfect as a “does everything” burger! They’re perfect crumbled in tacos, sliced on top of salad, made into a spicy southwest pasta dish… yum! (can you tell I was once their sales rep?? HAHA! But grew up eating these and they’re just so dang tasty!)
