Happy Monday! It’s technically still Monday, right?? We had a delightful, but busy weekend!
For this week’s menu, I am feeling like having some of the last of the Winter comfort foods, before we move into full Spring food mode. I managed to find a final package of the Trader Joe’s Pumpkin Ravioli that I froze back in the Fall. Win!
What have you got on the menu this week?
Monday:
Baked Penne Pasta
Tuesday:
Black Bean and Butternut Squash Enchiladas
Wednesday:
Pumpkin Ravioli from Trader Joe’s
with a Walnut Brown Butter Sauce & Balsamic Drizzle
Thursday:
Eggplant Parm Casserole
(Helps use up ingredients from our penne pasta!)
Friday (Soup Night):
Wild Rice & Mushroom Soup
Saturday:
Lazy Vegetarian Sheperd’s Pie
Sunday:
Grilled Cheese Roll ups with Tomato Soup

Grilled cheese roll ups?!?! They sound delicious and perfect for tomato soup. I’m thinking they would be very toddler friendly too 🙂
That’s the hope, Whitney!! Haha fingers crossed!!
Yeah, those grilled cheese roll ups are genius! They would be so easy to dip in your tomato soup. Yum!!
They are really tasty!!! And so simple.
I just love seeing what others are eating. Those enchiladas sound SO good. I love butternut squash.
They are a favorite. Really love the combo of roasted butternut squash and black beans!
