Happy Monday! Hope you had a wonderful weekend!

We had two absolutely DELICIOUS meals last week! The first was a quick, throw-together dinner. I made burgers with Morningstar Farms Spicy Black Bean burgers and topped the patties with guacamole, pepper jack cheese and carmelized onions. Mmmmmm! They were so good, we had them for dinner two nights in a row.

The second yummy dinner was Thai-style lettuce wraps. So good and simple! I made them the first night with the recommended chopped pecans, and then made them for friends another night using diced tofu. Both really yummy options.

This week’s menu had to include dinners that come together quickly. My husband has one more week left working at the hospital for crazy hours, and you just never know when he’s coming home.

I normally build the menu first, and then write the blog post, and now that I’m looking at the menu, it’s heavy on the black beans! We’ll be a very musical family 🙂

So I’m back! We had a delightful vacation, and was planning on doing a recap post this week… but I was seriously just too lazy to download all the pictures (lame??). So look for it next week!

But we did manage to vlog! When I initially downloaded all the footage, there was a whopping 30 minutes of it. And I really didn’t do anything all that exciting. But don’t worry – it’s paired down to a completely manageable 9 minutes 😉

DIY Greeting Card Organizer

An easy DIY Greeting Card organizer that you can quickly make in 30 minutes!If you’re a regular reader here at Cup of Tea, you know I’m not really a DIY girl… I have a hearty Pinterest account that I pin glorious ideas, but hardly ever execute. It’s just not my thing.

But every once in a while, I get bit by a bug that makes me want to DIY something.

I saw this pop up on Pinterest – an easy greeting card organizer! And thought I could handle that. It looked fairly simple enough. And I have greeting cards strewn all over the house.

This was a really quick, cheap DIY and it makes me smile every time I see it.

Basically, it’s a larger version of an old-fashioned recipe box, tabs and all! Let me show you what I did, in 30 minutes, during nap time! #momwin

Here’s what you need:

  • A photo storage box – I picked mine up at Michael’s. They were on sale at around $2. I picked a plain brown version since I’m a plain girl.
  • Scissors and/or paper cutter – I just happen to have a small paper cutter, but using a pair of scissors works too! The inspiration post recommends using a template from file folders or other tab dividers you have lying around (recipe box??)
  • Cardstock paper – you can use whatever your heart desires! I picked up a pad of scrapbook paper from Target.
  • Pens and other embellishments – I scrounged around and found a roll of gold glitter washi tape
  • Glass of Diet Coke – duh…. mandatory

First step, write down what categories you need to sort your greeting cards by. These are completely dependent on what your needs are! We are in that season of life where we go to a kid’s birthday party every weekend. So having a seperate category for that works for me. You can make these categories as detailed or as general as you like! But the more categories you have, the more dividers you’ll need. I did:

  • Birthday – Adult
  • Birthday – Child
  • Thank You
  • Holiday (Mother’s/Father’s Day, Valentine’s Day, Anniversary)
  • General (Thinking of You, Catching Up, etc)
  • Baby/Wedding Shower
  • Blank
  • Extras for when you think of more categories later

Next up, I chose my paper. I decided to go with a wide assortment of patterns, because, why not? Plus, I have that plain box… things need to be livened up.

I then started cutting. I didn’t use a template, so it was trial and error…. I guess using a template would have been a better idea…

I finished a few tabs off with some gold glittery Washi tape. And then wrote the categories down, one for each tab!

Voila! Finished!

It probably would have taken me less than 30 minutes had I not been watching Real Housewives of NYC.

Now I have a cute place for all of the various cards that are required every year.

Menu Monday #47

Hello, and Happy Monday! Hope you all had a wonderful weekend. We spent our Saturday driving back from Michigan back home to North Carolina, and as a result had a lovely low key Sunday. But we’re back to the regular grind now.

I’ve missed a few Menu Mondays this past month. Some weeks purely out of laziness. But I was also doing hodge podge meals, trying to whittle down our freezer and pantry supplies! And it was such a success!

Since we’ve been traveling and eating out a ton on vacation, I felt like this week was a week to eat healthy (in theory), light, and simple.

If you haven’t seen a Menu Monday post before, I share what we’ll be eating this week. (You can see how I generally menu plan here) I also try to include links to recipes where I can. Although some weeks are just DIY (open a can of this, saute that).

Monday:
Oven Fajitas

Tuesday:
Thai-Style Lettuce Wraps
(a new to us recipe!)

Wednesday:
Hot Dogs
Austrian Potato Salad (from Cook’s Illustrated – it’s mayo free!)
Chocolate Chip Cookies (just because)

Thursday:
Tomato and Marscapone One Pot Pasta

Friday:
Paninis with Pesto, Mozzarella, Tomato & Spinach

Saturday:
Leftovers

Sunday (Father’s Day!):
Thai food take out
Mint & Oreo Ice Cream Cake
