Happy Monday! It’s technically still Monday, right??  We had a delightful, but busy weekend!

For this week’s menu, I am feeling like having some of the last of the Winter comfort foods, before we move into full Spring food mode. I managed to find a final package of the Trader Joe’s Pumpkin Ravioli that I froze back in the Fall. Win!

Monday:
Baked Penne Pasta

Tuesday:
Black Bean and Butternut Squash Enchiladas

Wednesday:
Pumpkin Ravioli from Trader Joe’s
with a Walnut Brown Butter Sauce & Balsamic Drizzle

Monica from Jersey Girl, Texan HeartThis week’s featured blogger is Monica from Jersey Girl, Texan Heart. Her blog, first of all, is just pretty to look at! But I also just love her fashion style. She rocks amazing hats!! She also runs an Etsy shop, filled with fun repurposed home decor items and some of the coolest bracelets I’ve seen. Go over and say Hi to Monica!!!

Anywho, this week’s H54F for me is short, sweet and to the point. I’ve got a busy Friday/weekend ahead of me, prepping the house for a baby shower here on Sunday…

1. Elizabeth is feeling much better (thankfully!) and I’m just about over my sniffles and coughs.

2. So every night this week we’ve been up late for a variety of reasons. I’m looking forward to catching up on sleep next week… at least that’s the plan for now.

3. Wednesday we went to the Duke vs. Wake Forest game! What fun! It was Duke’s last game of the season, so it was really fun to see everyone all pumped up.

And, oh, there MAY have been exciting people there. Like Tony Romo. And other Cowboys that I didn’t recognize… but pretty cool.

4. We had beautiful weather Wednesday! 70+ degrees, sunny. Sheer bliss! Then today… it’s 30. Cruel, Mother Nature.

5. And now, I’m off to dust and mop in prep for this weekend’s baby shower! The nice thing about having events at your house is it gives you an excuse to really clean AND decorate. Now my house is all decorated for Spring! Handy!

Don’t forget Daylight Savings Time starts Saturday night. Boo. So Spring Forward!

Craving Spring Coral

Of all the colors that are making the rounds for Spring, I’m really loving Coral! That’s good news, because it pairs really well with my closet staple Navy.

I’ve scoured Pinterest and beyond, looking for some outfit inspiration. In my investigation, I’ve noticed that “coral” can range in tone drastically! Based on my own skin tone, I know that pink/peachy coral tones will look better than orange/red coral tones.

For Spring outfits, I love the idea of either going all out with a top or bottom in coral, OR just adding a pop of coral with a statement necklace.

If Navy seems a bit too drab of a color combo, then try Mint with the Coral! Reminds me of Charleston, SC!

Some of the beauty products are new to me, but something I absolutely love and can’t wait to pull back out is the Sugar Lip Treatment in Coral by Fresh. I LOVE those lip treatments, but this color in particular is just such a pretty color. The formula is moisturizing like a great lip balm, but the color is still fairly vivid for a balm.

Menu Monday #40 + Easy Build Your Own Pizzas

Happy Monday! Hope you had a fantastic weekend! We spent our time resting up after having the sickies move through. Fun.

That being said, this week’s menu is all about comfort foods that are easy to cook up! I am a sucker for homemade mac & cheese, and this recipe looks like a winner!

Monday:
Tacos

Tuesday:
Alton Brown’s Mac & Cheese

Wednesday:
Mexican Pizza
(From Fields of Greens)

Thursday:
Veggie Chicken with Mushroom Cream Sauce
(My own hodgepodge recipe)

Friday:
Chili with Cornbread
(This isn’t my usual recipe, but this one looks yummy!)

Saturday:
Enchilada Spaghetti

Sunday:
Mini Pizzas

And now, bonus recipe! We gave this a whirl a few weeks ago, and just had to share! It’s not necessarily a new invention, but we did build-your-own pizzas using English muffins as pizza crust!

I had bought a two pack of English muffins since my husband likes to use them as a breakfast sandwich base. We were craving pizza, and so I whipped this up.

Ingredients:
English Muffins
Sauce options (we used two kinds – pesto and a tomato basil pasta sauce)
Variety of topping choices

Preheat oven to 400 degrees. Open up the English muffins and lay the halves out on a parchment covered baking sheet. Bake English muffins (no toppings yet!) for about 5 minutes, until lightly toasted. Add sauce, then toppings. Bake for another 10 minutes or until cheese is melted.

We put together three types, but decided only two were yummy enough to share.

Pesto Pizza – pre-made pesto for sauce, topped with
Traditional – pre-made tomato basil pasta sauce, topped with mozzarella, olives and onion

The third was a Mexican style pizza… and it needed some tweaking…

But the possibilities are endless! You could use roasted red peppers, hot peppers, do a Mexican pizza version, or add sausage! This would also be a great party idea. Have toppings already chopped and guests and DIY their own pizzas.
