It’s been a while since I’ve squeaked out a favorites video! As a result, I decided it needed to be a real hodge podge of favorites from the last few months.
A few will make you chuckle, and few will be no surprise, and a few will (hopefully) be new to you!
I’ve been obsessed with podcasts lately, and I’ve shared 2 of my favorites ones for productivity.
Let me also share that those flats, while no longer available, were scored for only $7! And I found them the day after I destroyed a similar pair! If that’s not a Target win, I don’t know what is.
It’s the last Monday of the month! That means I’m teaming up with my friends Come Home for Comfort and Polka-Dotty Place to share our favorite recipes from this past month that you HAVE to try!
There are so many recipes to try on Pinterest, that I forget to actually make them. At least this forces me to try a few recipes that get pinned.
Here’s a rundown of what I tried!
Mexican Quinoa Stew | This was AMAZING! Really easy to make, and it had all of our favorite flavors. I was missing some feta cheese to top it off with, but otherwise it was perfect. Definitely making this again.
Pesto Pasta Salad | Confession – I didn’t make this pesto…. but this recipe did serve as inspiration to clear out some pantry items I had stored up! Win! I had some jarred pesto from Trader Joe’s and some sun dried tomatoes, so I just whipped this up. It was a yummy pasta salad, and I plan to make this again for an upcoming potluck!
Lightened Up Sun-dried Tomato Pasta | Have I talked about this one? For the life of me, I can’t remember…. we ate it for the first time in a long time and I forgot how good this is! It tastes like a fancy fettuccine alfredo. I don’t know if you could really call this a “lightened up” version (hello cream cheese, mozz and parm!) but using sun-dried tomatoes is a nice addition!
Roasted Tomatoes with Goat Cheese Polenta | This was the highlight of the month! There were zero leftovers after this meal. I really had to hold back from licking my plate. If you want to make something new this month, let it be this. Roast some asparagus as you roast the tomatoes and it would be a great complete meal!

Who had a great week??? I did! Let’s dive in.
1. Last week, I talked about basketball… but I’m out. Duke just lasted 2 rounds…. that’s life. And I’m pretty sure my bracket is ruined. So I checked out of March Madness HAHA!
2. Since before Christmas, I’ve been playing around with going back to a bullet journal. It all started with me buying another small plain notebook for brainstorms and lists, since planners NEVER have enough space. And soon, I found myself using the little notebook exclusively and not referring to my planner. It’s just nice having one book to reference instead of 2. So the last month I dove all the way in, playing around with weekly layouts, dailies, and monthly spreads. And yesterday I bought a new notebook for it! If anyone is interested in seeing inside my bullet journal, let me know. But if you want to know more, this video is a great overview!
3. I had a gloriously productive week. I had a bit of a computer hiccup mid-week where I wasn’t able to edit any of my recorded 4 videos… grr… but now I’ve got 2 of the 4 edited, so hooray! In video news, I shocked myself! I quickly glanced at my past videos and noticed I have several that are off the charts (for me, anyway!) viewed. I have one that’s at 60,000 views, one at 40,000, 2 around the 20,000 mark and one that is at 10,000 views. WHAT???? I’m such a fast talker, a babbler…. not fascinating at all. How are so many people watching?? Just an absolutely shocking element over on my YouTube channel….
4. One project I’ve started this week is whittling down our toy collection. We already tackled a toy swap system, where most toys get put away and then our collection in the play room gets rotated regularly. But it still feels like we are swimming in toys, and we have so many out that it’s become hard for Elizabeth to clean up on her own. Not to mention there are toys out that William probably shouldn’t be drooling on. So I’ve started a serious purge. For example, we have 5 different kinds of farm sets. We don’t need 5…..
5. I don’t have an Elizabeth story this week. She was actually a dream this week! But we did do something fun! I never bought a double stroller before William was born because I thought I would wait until we needed one. Now that the weather is nice I’ve been itching to go on a decent walk and a normal pace. So I borrowed a stroller from a friend and we’ve hit the neighborhood sidewalk 3 times this week! The kiddos were thrilled! I thought Elizabeth would ask to get out and walk but she hasn’t so far.

I’m actually being a smart person…. I normally menu plan/order groceries on Sunday afternoon, but we’ll most likely be in the car driving back from my in-laws. So here I am, early Saturday morning, doing the planning/posting! (Yay me!) Although, it’s technically 4:45am…. between William waking up and being super chatty and my husband snoring, I just decided to get up.
Anywho, on to what’s on the menu this week!
I decided that this week felt like a week to try all new recipes! I blame a podcast I was listening to… but it just felt like fun to try a bunch of new but simple recipes. When this kind of week pops up, I almost never end up making all of the recipes. But my ambitions are high this week.
Here’s this week’s menu. I was at least smart to choose several that use Goat Cheese! I love Goat Cheese!

Friday! What a week!
1. My parents were here last weekend for a quick trip before they continued on to the Caribbean for an even better trip. It’s always wonderful to have my parents visit! I swear, though, the kids needed the full week to recover from the visit. Is there such a thing as a Grandparent Hangover? There is now no one constantly talking/playing with them, and it’s a hard thing to get back to normal.
2. Who loves March basketball??? Last week’s games were intense! Duke played 4 days in a row, and my heart could barely handle it. It’s just so fun to watch good games though! Even my parents were in to the games. I mean… it’s Duke Basketball! Who wouldn’t get into it?
3. I spent some time wrapping up some projects that have been hanging out on my to-do list for a while. I spent two mornings over at our new church to organize a few classrooms. Wednesday I went without Elizabeth while she was at school. William slept in another room while I blitzed a classroom for an hour. It was SO productive!! Focusing on these projects for the week put me behind on other things (like editing videos to get up here) but oh well. Something got checked off this week.
4. We’re heading out of town this weekend for a quick trip to my in-laws. I can’t wait! But today will be spent packing up. I’m planning on a “pack with me” vlog while I’m packing up. That should be a fun video!
5. Elizabeth has entered this weird phase of being feisty but funny. I feel like every week I’ve got something to share! I did commit a parenting fail, however. Elizabeth is famous for grabbing a piece of paper, swirling scribbles all over with every color imaginable, and then declaring it a masterpiece! There is only so many of these I can keep…. yesterday I picked up a few and tossed them. I normally try to empty the garbage ASAP or at least cover it when I do this. But… I forgot. She came down from her nap, and I asked her to toss something in the trash can. I completely forgot her “masterpiece” was sitting on top of the trash!!!!! From across the house I hear “Hey! You threw away my masterpiece!”. The look she gave me…. it’s like she immediately started thinking about all the OTHER things she was missing, and wondering if I’d tossed those things too! (Which… I probably have….) Parenting Fail indeed!
