A quick, simple recipe for Huevos Rancheros. Perfect for a busy morning!

Sometimes getting a filling, nutritious meal on the table in rapid fire time is tricky! On days when I’m feeling rushed, my go-to is cereal (pour, add milk, done!). BUT on days when I know we need something that will keep us all going, I turn to a classic – Huevos Racheros!

I’m first to admit this is not an authentic recipe! But this is a quick way to get a taste of the classic in record time.

Here’s what you’ll need:

Veggies of your choice, diced up (our favorites are usually bell peppers and onions OR you can use a fresh pico de gallo salsa as a stand in! It’s perfect for when you need a short cut)

Your choice of canned beans, drained and rinsed (we love black beans)

Eggs (2 eggs per person)

Shredded Cheese (pepper jack is our go-to)

Bottled salsa verde

Tortilla Chips

Cilantro to top it off (optional)

The best thing about this recipe is that it’s totally mix and match depending on your family’s taste buds or what you have on hand in the fridge! If you don’t like onion, don’t add it! Prefer sausage over beans? Why not! Add that instead. Totally up to you.

Here’s how to bring it all together.

  1. Saute your diced veggies in a non-stick skillet until soft. (If you’re adding meat, cook first, then add the veggies)
  2. Whisk your eggs and season to taste. Add the whisked eggs to your skillet and cook/scramble.
  3. While the eggs are cooking, toss in a handful or two of beans. This is a total eye ball… add what looks right to you!
  4. Once the eggs are mostly cooked, add a 1/2 cup of salsa verde and combine. Depending on how many you’re feeding, you may need some more. (4 eggs feeds 2 people – I find 1/2 cup of salsa is just right)
  5. Turn off heat and top with some cheese. Then crumble in a handful of tortilla chips. Add more if needed. Top with cilantro (optional). Stir to combine before serving.

Easy!

This whole process takes me about 10 minutes! While those eggs are cooking, I can easily whip up any other sides we want, like fruit. I can even set the table.

The salsa gives just the right amount of flavor and kick to the eggs. And having the veggies (or pico de gallo) adds some color and freshness. You could even dice some fresh tomato and top the huevos rancheros when you’re ready to serve. Yum!

This week’s featured blogger is Beth from Our Pretty Little Girls! She’s a wife and a mom to two of the most precious girls in the blogging world! She blogs all about the joys of life, including fitness, homeschooling and DIY! Cool news – she AND her 7 year old daughter are running a 5K together this weekend. How sweet is that??? I’ve been following Beth’s blog for several years now, and count her amongst my “blogging buddies” crew. Swing over and say hello to Beth today!

It was quite the week for us!

1. I hope you had a wonderful Easter! We did! It’s always a delight to spend holidays with family. We spent three days up at my in-laws house and enjoyed spending time together, laughing, chatting, and watching Elizabeth and her cousin playing together. I suppose there should have been some fun Easter picture round up post this week… but here are a few favorites!

2. We just finished up a new series this week – Turn. The first season is on Netflix, and then it looks like the next few seasons are on AMC for streaming. It was so good! I’m a period drama fan, so a series set during the Revolutionary War is right up my alley! I was actually shocked my husband liked it too. If you’re a period drama fan too, definitely check it out!!

3. I had my 30 week pregnancy appointment this week and all is well! This baby is pushing on all sorts of organs that Elizabeth NEVER did… he’s definitely hanging out a lot lower than she did. I’m technically 31 weeks now, so it’s hard to believe that I’m in the last few months here. Weird! I kind of need to get my act together… I’m also getting tired of wearing the same clothes over and over… but I refuse to buy ANY more maternity clothes… I mean, really, who do I see? Elizabeth will never know Mommy has been wearing the same shirt 4 days in a row.

4. This weekend my parents are in town visiting!! Hooray! They usually come down the first week of April to visit and then do a little vacationing. They just celebrated their 41 wedding anniversary! I adore my parents, always have. When they come to visit, we’re all content to catch up, chat, and eat at some local restaurants (my dad likes to think he’s rubbing shoulders with locals and local places). And watching them play with Elizabeth is so precious! Seeing your parents playing with your child gives you a glimpse into what they were like as parents with you. So fun! I’ve also been explaining to Elizabeth that Grandma and Grandpa are Mommy’s mom and dad. Her brain clearly explodes when I tell her that – HAHA!

5.  And… really, the only thing I’ve been doing this week has been working with Elizabeth on potty training… argh…. this has been one of the HARDEST thing I’ve ever done…. I’ve never second-guessed myself so much before in my life. I have been vlogging this whole week, if nothing else to document how hard this has been so I can look back and giggle at my past frustrations. So far, things are going ok. We’ve had plenty of successes, but plenty of fails too. We haven’t left the playroom for 3 days… haven’t left the house all week! I’m getting cabin fever….

One funny story though! I needed to go to the bathroom, and what’s a good mommy to do when working on potty training? Haul the toddler in there with her! As soon as my tush hits the toilet, Elizabeth belts out “Mommy! I have to poop!!!!!”. So I tell her to hightail it down to her little potty. She starts to head off, but then turns right around and says “Oh no, Mommy! Poop out my tushy! Help!”. I respond with a panicked “I can’t!!!” because I’m pregnant, and pregnant ladies always need to pee. So we both start hollering for my husband – “DADDY!!! HURRY!!!! HURRY!!!” – and he comes running thinking there is some horrible injury. HAHA! I could NOT stop laughing all evening. It was just a comical scenario.

What’s In My Handbag Right Now!

I’m such a nosy person, so videos that give me a chance to peek inside someone’s stuff is right up my alley! Who doesn’t love a good “what’s in my bag” video?

I figured this was my last chance to show you a regular handbag before new baby gets here and I’m now “mom with 2 kids” bag hauler.

This particular bag is from Target last year (here is a similar bag) In general, I despise cross body bags. They look weird and do something strange with my boobs. Not to mention kind of uncomfortable to carry. BUT it really is handy to have one when you’re chasing a kid on the playground.

Menu Monday | New Pinterest Recipes To Try #3

The best Pinterest recipes that you have to try!
It’s the last Monday of the month! That means I’m teaming up with Whitney from Come Home for Comfort and Whitney from Polka-Dotty Place to share our favorite Pinterest recipes that you HAVE to try!

This month it was hard to squeeze in new recipes because we were sick! The last thing I want to do when I’m sick is seek out new recipes and cook. But this last week we were on the mend and I snuck in a few fav recipes!

This tortellini salad recipe is SO easy to throw together, and depending on how much tortellini you cook, you can have salad for days! I usually buy a large pack of cheese tortellini from Costco and then cook half and freeze half. I even “cheated” a bit on the easy factor with this salad this time by using a bottled Greek salad dressing.

We must eat Mexican food at least once a week. That’s just how we were built. This casserole was really simple and we had some leftovers too, which was perfect since I didn’t have much energy to cook breakfast or lunch each day. Sub out refried and use black beans if you’d like!

This is one of the EASIEST brunch items to throw together when you’re craving/wishing for cinnamon rolls but forgot to start the whole process the night before. This is so satisfying and easy!! I could eat this every day.
